Chicken Little, Shin-Chan & Black Forest




12/1/08 - Dari semalam lagi saya buat kek Hari Jadi untuk anak, anak buah dan ipar saya. Semuanya di lahirkan bulan January 11,19,21. Masing-masing hendak kek lain-lain. Jadi saya buat Chilled Strawberry Cheese Cake (chicken little, Kek choklat Zai (Shin-Chan) & Black Forest (strawberry).

Chilled Blueberry Cheesecake

Base
120 gram biskut Marie hancur (Roz guna digestive biscuits)
120 gram mentega cair

Inti (Filling)
a)
2 biji kuning telur
150 gram gula
160 gram susu

Masak gunakan cara double boiler

b)
2 1/2 sudu besar gelating dilarutkan dalam 6 sudu besar air didih

c)
250 gram krim keju
250 gram double krim - pukul sedikit (Roz guna Anchor whipping cream)

d)
1/2 sude besar jus lemon

Cara membuatnya
Campurkan serbuk biskut hancur dengan mentega cair dan bentukkan di dalam acuan bulan 9" (loose base) - sejukkan
Pukul krim keju sehingga licin, masukkan a, b, d dan double krim.
Tuangkan ke dalam biskut hancur yang sudah dibentuk dan sejukkan selama 2- 3 jam
Letak blueberri filling di atas cheesecake
Hiaskan bahagian tepi dengan icing
Untuk variasi (menggantikan blueberri)
Kek Keju Coklat - sapukan bahagian atas kek dengan coklat ganache (larutkan 250 g coklat + 100 g double cream yg baru dipanaskan)
Kek Keju Oreo - untuk base, guna 120 gram biskut oreo (buang krim) dan 60 gram mentega cair. Gunakan 2 keping biskut yang dipecah2kan( sekali ngan kim) untuk dicampurkan ke dalam adunan kek keju. Kurangkan 30 gram gula, jika terlalu manis.

Resepi:
Kek Chocolate sponge mix - beli kat kedai bakery.. just follow instruction to bake.
Canned Cherry - for filling, drain the cherry first.

Instruction:
-bake cake

-Meanwhile, drain cherries, reserving 1/2 cup juice. Combine reserved juice, cherries, sugar and cornstarch in 2-quart saucepan. Cook over low heat until thickened, stirring constantly. Stir in vanilla. Prepare Frosting.

-With long serrated knife, split each cooled cake layer horizontally in half. Crumble one split layer; set aside.

Frosting: Combine 3 cups cold whipping cream and 1/3 cup powdered sugar in chilled deep medium bowl. Beat at high speed of electric mixer until stiff peaks form.

-Reserve 1-1/2 cups Frosting for decorating cake. Place one cake layer on cake plate. Spread with 1 cup Frosting; top with 3/4 cup cherry topping. Top with second cake layer; repeat layers of Frosting and cherry topping. Top with third cake layer.

-Frost side of cake with remaining Frosting. Pat reserved crumbs onto frosting on side of cake. Spoon reserved frosting into pastry bag fitted with star decorator tip. Pipe around top and bottom edges of cake. Spoon remaining Cherry Topping onto top of cake and put chocolate decoration on it.
