24/12/2008 Butter Cake with Mixed Fruits for Makcik Mazlifah

I baked this cake with special request to have a tall cake without slicing it. I used one and a half recipe of Chef Tania's butter cake and add in some mixed fruits. To get a high rise cake I layered the wall of the tin with 2 patchment papers. Here is the recipe...

CHEF TANIA BUTTER CAKE(ALL IN ONE METHOD)

BAHAN NYA

10 EGGS GRADE A (USE 6 WHITES ONLY)
280 GM FINE SUGAR
230 GM TOP FLOUR(JIKA GUNAKAN PLAIN FLOUR TAMBAH 1/2 ST B. POWDER)
1 ST VANILLA ESSENCE
1 SM OVALETTE
250 GM BUTTER(MELT USING DOUBLE BOIL METHOD)

METHOD

1. MIXED ALL EXCEPT BUTTER AND BEAT AT HIGH SPEED UNTIL WHITE AND FLUFFY THEN MIX IN SLOWLY (AT LOW SPEED) THE BUTTER.
2. LINED CAKE PAN WITH PATCHMENT PAPER
3.BAKE AT 180C FOR 45 MINUTES TO 1 HOUR. (I use 150C at 1 hour). TEST THE CAKE WITH CAKE TESTER AND MAKE SURE IT COMES OUT CLEAN.

NOTE: YOU CAN ADA FLOVOURING, CHOCOLATE CHIPS OR MIXED FRUITS

19/12/2008 Disney princess cake for Ayu

This is a cheese cake with sponge cake as a base. I traced these Disney Princess pictures on transparencies using melted chocolate as an outline. Let it set to harden & transfer onto the cake frosting. Then I paint them with coloured pipping jelly.

17/12/2008 David Archuleta for Lini

This is a chocolate moist cake with edible image David Archuleta for Lini. To avoid lumps on edible image I coated the back of edible image with melted white chocolate and leave it to harden in the freezer before putting on the cake frosting.

14/12/2008 Wedding Cake for Azliana

One big wedding cake for Azliana. I bought the tier the rotating & lighting white roses from Pastrypro. This is chocolate moist cake 4 recipe with butter cream topping and ganache. I use small spoon to make the base design. The edible image is layered with melted white chocolate to avoid lumps on the photo. the white chocolate is set to harden.

7/12/2008 Mini Almond Bundt cake (cabaran RNet)

I made the above sweet cake for Hari Raya Haji. The cake is lovely but if don't have a sweet tooth avoid the glaze. Here's the recipe.



Mini Almond Bundt Cakes

Ingredients

Makes 6.

* 10 tablespoons unsalted butter, room temperature, plus more for pans
* 6 tablespoons sliced almonds
* 1/3 cup coarsely chopped almonds
* 5 tablespoons packed light-brown sugar
* 1 teaspoon ground cinnamon
* 1/8 teaspoon freshly grated nutmeg
* 1 1/2 cups all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 3/4 cup granulated sugar
* 1 large egg
* 1 tablespoon pure vanilla extract
* 3/4 cup sour cream, or plain yogurt
* 2 cups sifted confectioners' sugar
* 3 to 4 tablespoons milk

Directions

1. Preheat oven to 350 degrees. Generously butter six mini Bundt pans; set aside. Spread sliced almonds out on a baking pan, and toast until golden brown. Transfer nuts to a bowl to cool.
2. In a medium bowl, combine chopped almonds, light-brown sugar, cinnamon, and nutmeg; set aside. In another medium bowl, sift together flour, baking powder, baking soda, and salt; set aside.
3. In the bowl of an electric mixer, combine 6 tablespoons butter (I did not read the recipe correctly and I made X3 and use 20 tablespoon butter instead of 18 tablespoon butter) and granulated sugar. Beat on medium speed until light and fluffy, about 3 minutes. Add egg; beat until combined. Add 1 teaspoon vanilla, and beat until smooth. Add 1/3 of reserved flour mixture and half of sour cream; beat to combine. Repeat. Add final third of flour mixture, and beat to combine.
4. Fill each Bundt pan with 3 tablespoons batter, and spread evenly with a small offset spatula or spoon. Sprinkle each with 2 tablespoons of reserved almond-spice mixture. Top with additional 3 tablespoons batter; the batter should come to within 1/2 inch of the rims of the pans.
5. Bake until cakes are golden brown and a cake tester inserted into the center comes out clean, about 20 minutes. Transfer cakes to a wire rack to cool completely. Unmold cakes. Place cakes, flat sides down, on a wire rack placed over a baking pan.
6. Melt remaining 4 tablespoons butter over medium-high heat until color turns nut brown, about 5 minutes. Pour butter into a medium bowl, leaving behind any dark sediment. Stir in confectioners' sugar, remaining 2 teaspoons vanilla, and 3 tablespoons milk until smooth; add an additional tablespoon milk, if necessary, so glaze is pourable. Drizzle glaze over cakes, and sprinkle with toasted almonds. Serve.


To make one large Bundt cake instead of six small ones, double this recipe and bake in a 10-inch Bundt pan for 45 to 50 minutes.

My comment is you only have to make 1 mixture of chopped almond and 1 portion of glaze.

We celebrated birthday for all 4 of us in the family. I made oreo ice-cream cake (recipe below). I took out my photo because I did not use scarf. The house was smoky when the barbecue started.

1. Putih Telur 4 biji
Tepung Jagung 10 gram
Gula Halus 150 gram
Perasa 1 sudu
UHT Milk 500 ml

2. Fresh Cream 250 gram

(I add crush oreo 1 pack)

Proses Kerja:
-Masak (1) hingga mendidih
-Kemudian simpan (1) ke dalam Freezer. Biarkan hingga ia hendak menjadi
beku.
-Adunkan (1) dengan (2) pada kelajuan perlahan.
-Kemudian adun menggunakan kelajuan tinggi. Putar hingga menjadi
kembang. (Suzi adunankan 3 kali about 10 minutes each & keluar masuk balik dalam peti ais)
-Last batch Suzi crush Oreo dgn creamnya sekali & beat in sekejap aje supaya sebati.
-Sediakan kek sponge yang dipotong 3 lapisan, sapukan ice cream pada
setiap lapisan.
-Masukkan kek kedalam freezer, biarkan
menjadi beku.


Hias dgn fresh cream as you like. I paste the photo image of us on the cake. Simple design because I don't have much time to get it done.
